    Default Chipotle Bar-B-Que Sauce

    Ian, this sauce is not real hot but does have a bite. I like it on pork and chicken. CF

    Bill’s Chipotle Bar-B-Que Sauce

    Ingredients
    1 cup brown sugar
    1 cup cider vinegar
    1/2 cup molasses, honey or cane syrup
    1/2 cup Worcestershire sauce
    4 tablespoon yellow mustard powder. I think jar mustard would work also.
    2 tablespoon Chile powder
    4 teaspoon black pepper
    4 teaspoon onion powder
    4 teaspoon garlic powder
    2 teaspoon allspice
    1/2 teaspoon ground cloves
    1/2 cup Chipotle en adobo sauce (chopped fine or run through blender)
    4 cups catsup = 32 oz.
    3 cups raspberry, apricot, strawberry, blueberry or what ever preserves you like. I like the apricot best.
    Procedure
    Combine sugar, vinegar, molasses, Worcestershire sauce, mustard, Chile powder, allspice and cloves.
    Bring to simmer over med. heat. Cook uncovered, stirring until all ingredients are dissolved. Stir in catsup and bring to low boil. Reduce heat add preserves and Chipotle pepper. Bring back to low boil. Pour up into pint jars and cap hot.
    Should make about 3 pints.

    Hello CF. I hope I don't get my mother in trouble with the powers that be for doing this but I'm riding on her coattails to let you know that I've seen your barbecue sauce and it sure looks good. But I'm curious. What is cane syrup? Would that be the same as light corn syrup? Or good old Karo syrup? And would yellow mustard powder be the same thing as bottled ground mustard that you buy in the spice aisle at the supermarket? The next time my mother decides to create a barbecue abortion on the grill I'm going to toss her back in her kitchen, make this sauce and do it myself. Thanks for sharing your recipe. Ian M

    Ian, I somehow don't think your Mom will scold you.
    Where did you see my sauce? I know I have posted on several sites.
    Cane Syrup, is sugar cane juice, cooked down to make syrup. (not molasses)
    Some commercial vendors of cane syrup do add corn syrup. Not good, pure is better but not all created equal.
    Making the old thyme cane syrup is a dieing art, this link will tell the story.
    SYRUPMAKERS
    Dry mustard, is just the mustard seed ground, nothing added. Coleman's is the best brand. Your Mom will know that as it is made in England. This sauce is also great on chicken wings. I really hope you enjoy it. CF

    Does the vinegar come through or does all the sweetness cover it up?

    This sauce is more of a sweet-heat. Really good on pork and chicken. I like to just use a rub (no sauce) on beef. CF

    This sounds perfect! I don't like a real hot BBQ sauce.
