Default Scampy butter recipe?

I used to be able to buy scampy butter at my local supermarket, and there was only one place I found it, but I went there today, and they don't have it anymore. I tried making some, but it came out all weak and running, does anyone have a good recipe for scampy butter?

I don't know if this is what you are looking for or not:

Scampi Butter (Base):
1/4 pound unsalted butter, softened
1 tablespoon minced garlic
2 tablespoons minced red onion
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Dash white pepper
Dash Worcestershire sauce
1 lemon, juiced
1 tablespoon white wine

In a bowl, whisk all ingredients until thoroughly combined. Refrigerate until ready to use. Use the Scampi "base" to make different flavored butters.



or to 1/2 cup butter add:

Herb Butter

2 T. chopped fresh dill
1 T. chopped fresh parsley

Serve on assorted steamed vegetables, fish or chicken.


Seafood Butter

2 tsp. grated onion
1 1/2 tsp. Old Bay seasoning

Serve on seafood or baked potatoes.


Lemon-Anchovy Butter

2 tsp. anchovy paste
1 tsp. grated lemon rind
1 tsp. fresh lemon juice

Serve on seafood.

Lemon Pepper Butter

1 tsp. pepper
1 tsp. grated lemon rind
1 tsp. fresh lemon juice

Serve on steak, fish, chicken or shrimp.
