Default Easy Pesto Salmon...

Easy Pesto Salmon

2 cups fresh spinach leaves
1/2 cups basil leaves
1/4 cup fat-free, low sodium chicken broth
1 T olive oil
1/4 t. salt
3 garlic cloves, peeled
cooking spray
2 (6 oz.) slamon fillets, skinned
2/3 cup hot cooked brown rice

Preheat oven to 400 F. Place first 6 ingredients in food processor and process until smooth. Spoon 3 T pesto into bottom of 8" square baking dish coated with cooking spray. Top with salmon fillets, and spread with remaining pesto. Bake at 400 F for 20 minutes or until fish flakes easily. Serve with rice.
