Salmon loaf
1 can salmon 1 onion, chopped Lemon juice Parsley flakes 1-2 eggs (I usually use two, depending on consistency) Oatmeal Salt, pepper (I usually add lemon pepper, too) Preheat oven to about 400. Remove bones from canned salmon. In mixing bowl, combine salmon, egg(s), spices, lemon juice, onion. Add oatmeal (usually about 1-2 cups) until you have a nice consistency – kind of sticky, but sorta firm. Not runny. If you need to, you can add a splash of milk to get the right texture. Spray a loaf pan with Pam and spread your mixture into the pan. Bake for 45 minutes to an hour or until it’s kinda golden brown on top, and it’s easily sliced (no longer sticky inside). |
