Default Fish & Chips

Fish Filets
Pancake batter (already mixed up)
all purpose flour
Lemon juice
Salt as desired
Pepper as desired
oil for frying

Wash each filet of fish and pat dry, place a couple tsp.'s of lemon juice into the pancake batter stir well. Coat each filet in the batter, then dredge in flour. Immediately place into 350 degree hot oil and fry to a crisp golden brown. Remove filets from oil and place onto a rack to drain, sprinkle with salt and pepper. Serve immediately with hot french fries and malt vinegar. I like the homemade french fries that are baked in the oven on a cookie sheet coated with oil. I get the fries going 1st and right before they are done I fry the fish so they are both done about the same time.

Hi BBT,
I simply put a 1 inch deep amount of oil in my cast-iron skillett and pan fry, they are real thin filets. Yummy
Enjoy, CCCathy
