1 lb. fresh, cooked lobster meat, coarsely chopped
1/4 cup mayo 2 tsp. lemon juice 1/2 tsp. salt 8 slices bacon (about 1/2 lb.) 1/2 cup Thousand Island dressing 2 medium tomatoes, sliced 4 lettuce leaves 4 sandwich rolls PREPARE the lobster salad. In a medium bowl, combine lobster, mayo, lemon juice, and salt. Cover tightly and refrigerate to keep chilled. COOK bacon until crisp and brown, 4-6 minutes. Drain on paper towels. SLICE rolls horizontally, and spread 2 tbs. of Thousand Island on each half. Place 3/4 cup of the lobster salad on the bottom halves of the rolls; top with 2 slices of bacon, 1-2 slices of tomato, and a lettuce leaf. ENJOY! |
