Leftover boneless chicken breast
Red and Green Bell peppers, sliced (about a quarter of each pepper per sandwich) Onion, sliced 1 clove garlic chopped Olive oil salt and pepper to taste Monterey Jack Cheese (slices or shredded variety) Texas toast (I use the frozen variety, prepared by their instructions) Re-heat leftover chicken breast while sauteeing peppers, onion and garlic in olive oil. Add salt and pepper to taste. Bake texas toast slice(s) and remove from oven about 3-4 minutes ahead of directions top with chicken, pepper/onion mixture and sliced or shredded cheese, put in oven just to melt cheese. Serve |
