Pita Pizzas


1/2 # lean ground beef
5 whole pita breads (6")
1 can (16oz) fat-free refried beans
1 c chunky salsa
1/2 c shredded redcd-fat Mex.cheese blend
5 tbsp fat-free sour cream
2 green onions, sliced

In a nonstick skillet, cook beef over med heat til
no longer pink: drain. Place pitas on a baking sheet.
Spread with refried beans; top w/beef, salsa, and
cheese. Broil 4 in. from heat for 3-5 min or until
cheese is melted. Top w/sour cream and onions.

Yield: 5 servings

I work in a group home for developmentally disabled individuals. This has gone over bigtime with them as they love pizza. With our food budget, we can't always order pizza from the big guys but with this recipe, they think they've hit the jackpot. Of course, I have to double the recipe for 8 individuals, but that leaves me with one.
