    Default Citrus Vinaigrette

    Citrus Vinaigrette
    The acids from the fresh citrus juices are a great way to begin
    any menu because they wake up the appetite and get the
    digestive system going.
    2 cups orange juice
    3/4 cup lemon juice, or the juice from 4 lemons
    2 tbsp. lime juice, or the juice from 3 limes
    2 cups white wine vinegar
    1/4 cup liquid honey
    2 cups vegetable stock or water
    2 cups vegetable oil
    salt and white pepper to taste
    Place all ingredients into a food processor or blender and purée
    for 2 minutes. Stop to adjust seasonings then blend for 30
    seconds more. This dressing will keep in the refrigerator for up
    to 7 days. Blend or whisk before each use.
