    Default I have a secret i'm just dying to tell..

    This week i made chicken and dumplings for supper (mon night), i like drop dumplings the type that are fluffy and like a big moist biscuit, and are just wonderful tasing in with the chicken & broth. I add diced carrots, english peas, and chopped celery to mine also.

    Well i went to make the dumplings (i use self-rising flour) and lo & behold i only had 1 cup of flour in the canister and i needed 2...so i thought for a moment>>>> i decided to add 1 cup of instant mashed potato flakes & 1 tsp. Baking powder and a little salt to my flour for my dumpling dough! Well let me tell you it worked very well!!! They were the best and fluffiest dumplings i have ever ate! I just used my milk and oil like i normally would and made a stiff dough, rolled up my dumplings about an inch & 1/2 size balls then dropped each into the boiling broth and cooked until done, i even thickened the broth with a bit of corn starch & milk. It turned out terrific! So if any of you ever find yourself in the mood for some light & fluffy dumplings give this a try!

    Cath- here are a couple responses I got to posting your SECRET at another food forum. I thought you might enjoy reading it!

    Thanks for sharing the post. I am going to try this method. It sounds like a great and creative idea. My friends MIL makes meatballs with instant mashed potatoes and says they are the lightest and most wonderful meatballs she has ever had.


    Kevin: When I read your post, I couldn't believe it but I have never had dumplings! I've heard of them but just never ate one. I'm from Eastern European heritage and dumplings are a big deal, like pierogi. Living with my grandmother from Lithuania, she never made dumplings. Now I'm going to have to try some.
