    Default Sun-dried Tomato Dip

    Sun-dried Tomato Dip

    2 cups
    8 ounces cream cheese, softened
    12-15 sun-dried tomatoes packed in oil, drained reserving 1 T oil
    2-3 garlic cloves

    Put the cream cheese, tomatoes, garlic and 1 T oil in a blender.
    Process just until the ingredients are blended, but not creamy as there should still be some small pieces of sun-dried tomatoes in the dip.
    Serve with assorted vegetables, chips & crackers.

    I love this dip. At times I even mix in some diced clams and a bit of horseradish. Hide the bowl because I will double dip just to keep it for myself.

    This turned out so good!!! I toasted up some foccacia bread and we spread this dip on it....Yum Yum Yum!!!
    I like IC's idea as well. There is a Crab-Meat Dip I make that is very similar to what IC mentioned. I will find it and post it here!


    Crab Meat Dip

    8 ounce package cream cheese
    1/3 cup mayonnaise
    1/4 tsp horseradish
    1 1/2 tsp freshly chopped minced onion
    1/2 tsp seasoned salt
    1 tsp dried parsley flakes
    1/4 tsp garlic powder
    1/2 pound crab meat

    Mix the cream cheese, mayonnaise mustard, horseradish, onion and seasoned salt together. Add the parsley and garlic powder. Gently fold in the crab meat.
