SESAME CRUSTED CATFISH
4 catfish fillets, 4 to 6 oz. Each
Vegetable oil for frying
Sesame seeds
Green onions chopped
Heat 1-inch of oil in heavy skillet over medium heat. While oil is heating, rinse fillets and pat dry with paper towels. Place sesame seeds in shallow dish. Press fillets into sesame seeds to fully coat both sides. Place in hot oil and cook 3 to 4 minutes per side until fish flakes easily. Drain on paper towels. Drizzle sauce over to serve. Garnish with green onions.
