    Default Pepper Steak Caballero

    Pepper Steak Caballero

    1½ pounds sirloin steak, cut into 1/8-inch strips
    1 tablespoon paprika
    2 cloves garlic, minced
    2 tablespoons margarine
    1 cup sliced green onions
    2 green peppers, cut in strips
    2 large fresh tomatoes, diced
    1 cup beef broth
    ¼ cup water
    2 tablespoons cornstarch
    2 tablespoons soy sauce

    Sprinkle steak with paprika, and allow to stand while preparing other ingredients. Cook steak and garlic in margarine until meat is browned. Add onions and green peppers, and continue cooking until vegetables are wilted. Add tomatoes and broth, and cover and simmer about 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak, and cook until thickened.
    Serve over rice or noodles.
