Blueberry Buckle
Ingredients:
3/4 C sugar
1/4 C vegetable shortening
2 eggs
1/2 C milk
1 1/2 C flour
2 tsp. baking powder
1/4 tsp. nutmeg
Scant 1/4 tsp. ground cloves
1/2 tsp. salt
1 1/3 C fresh blueberries
Topping:
1/2 C sugar
1/2 C chopped nuts
1/3 C flour
1/2 Tsp. cinnamon
1/4 C butter
Mix topping ingredients until crumbly and spread over batter.
Directions:
Preheat oven to 375 degrees. Mix sugar, shortening, eggs and milk. Stir in all dry ingredients. Fold in blueberries and spread into greased 9" square pan.
Sprinkle batter with topping. Bake for 45 to 50 minutes. Serve warm with milk or cream.
