    Default Famous Durgin Park Indian Pudding

    This dessert is one of the most requested items on the menu at Boston's famous Durgin Park restuarant. Affectionally known as "baby poo pudding" by most residents of the area, it is a delicious blend of water, cornmeal and molasses which takes a while to make but is worth every moment of the time.

    Ingredients:

    1 C water
    1/2 C yellow cornmeal
    3 C cold milk
    2 Tbls. unsalted butter
    1/4 tsp. salt
    1/2 C molasses
    1 sp. ground ginger
    1 egg lightly beaten

    Directions:

    Preheat oven to 325 degrees.

    Whisk water with cornmeal in a heavy saucepan until smooth.
    Place over medium-high heat and stir constantly until boiling. Whisk in the milk and reduce heat to medium. Heat to boiling once more, stirring constantly, about 5 minutes. Reduce heat to low. Gently simmer, stirring frequently, for 15 minutes. The mixture will be like a thick, creamy porridge. Whisk in the butter and salt and remove from heat. Let stand, stirring occasionally, for 10 minutes. Whisk the molasses into the cornmeal mixture until well incorproated. Add ginger and beaten egg. Transfer to a greased, 1 1/2 to 2 qt. baking dish. The pudding will thicken as it cools. Serve warm with cream or whipped topping.

    Being called "baby poo pudding" I would have a hard time eating it after changing a diaper though.
