    Default American Indian Corn Puffs

    Ingredients:

    2 eggs, lightly beaten
    1 C freshly scraped or frozen corn kernals
    1/3 C flour
    1 tsp baking powder
    1/2 tsp salt
    1/4 tsp. paprika
    Freshly ground black pepper to taste
    Oil for deep frying


    Directions:

    Combine the eggs and corn in a mixing bowl

    Sift together the flour, baking powder, salt, paprika and pepper. Fold this into the corn mixture. Drop by small spoonsful into deep fat heated to 365 degrees until browned all over. Drain on paper towels and serve hot. The puffs may be reheated in the oven.

    Yield about four dozen.

    Sounds a lot like hush puppies - made with corn - doesn't it?
