Apple and Banana Crumble

1 ½ lb cooking apples
3-4 medium sized bananas
juice of 1 lemon
3 oz caster sugar

Crumble...
2 oz porridge oats
2 oz plain flour, sifted
4 oz ground almonds
4 oz light soft brown sugar
6 oz unsalted butter, chilled


Preheat the oven to Gas 5, 180 C.

Make the crumble. Combine the oats, flour, ground almonds and brown sugar in a bowl. Cut the butter into peices and add it to the dry ingredients.

Peel and core the apples and cut into smallish chunks. Peel the bananas and slice. Mix in a bowl with the lemon juice and caster sugar then spread in a rectangular ovenproof dish.

Scatter the crumble over the fruit and bake for 45 minutes. Check after 20 minutes that it is not browning too quickly, and reduce the oven temperature if it is.
