    Default Velveeta Fudge

    Here are a few Velveeta Fudge Recipes as
    found at WMT's Open Line radio program.
    (Cedar Rapids, IA)
    I am making some to take to a Christmas
    Eve family get together. Not sure which
    recipe I will try, though.


    Best Ever Fudge

    1 pound butter, melted with 1 pound Velveeta cheese
    Sift together: 1 cup cocoa and 4 pounds powdered sugar and add to cheese mix.
    Add 1 tsp vanilla and nuts to taste
    Cool and slice.

    VELVEETA FUDGE

    1 cup butter, softened
    8 oz. processed cheese, cubed
    1-1/2 lbs. powdered sugar (about 5 cups unsifted)
    1/2 cup unsweetened cocoa
    1/2 cup non-fat dry milk
    2 tsp. vanilla extract
    2 cups chopped pecans

    In a large saucepan over medium heat melt butter and cheese cubes together, stirring frequently. Remove from heat. Sift together the powdered sugar and cocoa. Add to cheese, mixing well. Stir in the dry milk, vanilla and nuts. Turn into a 9 x 9 pan. Chill until firm and cut into squares.

    RICH VELVEETA FUDGE #2

    3/4 lb. Velveeta
    1 cup margerine
    6 squares unsweetened chocolate
    2 tbsp. light corn syrup
    2 lbs. powdered sugar, sifted
    1-1/2 cups chopped pecans
    1 tsp. vanilla

    Heat Velveeta, chocolate and corn syrup in saucepan over medium heat until melted. Gradually add the sugar, beat with electric mixer on medium until smooth. Add pecans and vanilla. Pour into greased 13 x 9 pan. Smooth surface over. Refrigerate several hours, then cut into squares.

    I got the fixings for the Velveeta Fudge and
    Kevin the Grey thinks I should do recipe #3
    so will do that. I have some Italian cooking
    chocolate that will substitute for the squares
    of baking - each square is one ounce. It
    should be good.

    That's funny - my middle son IS a chef de cuisine.
    He says he's a cook.

    Paula Deen has a little Christmas book (not a cookbook- just a "story" book full of hints, tid-bits of knowledge, ideas, tales, etc.) that has this recipe in it.

    She tells a story that gives me a chuckle: She says she when she first tried a velveeta fudge recipe but was really leery of it. To her surprise it was delicious and she couldn't detect the processed cheese at all! When she presented a plate of tiny cut squares of it to a group of girlfriends they all sampled and seemed to like it. She then revealed the secret ingredient and 3 of the group at the exact same time looked up at her and said: "You're sh@ttin' me?" Hee-Hee! So funny to think of Paula tellin' that story in her homey drawl...

    Well, all righty then; I made the Velveeta Fudge #2
    and it tastes just wonderful. You'd never know there
    was Velveeta in it. I just tasted the spoons and pan
    and will wait till tonight when the Mrs get home to
    try it. It should be set up fine by then.
