    Default White Chocolate-Lemon Shortbread Cookie Bars

    Ingredients:

    3 C all-purpose flour
    1 C plus 1 Tbls. sugar, divided
    2 Tbls. grated lemon peel
    1 tsp. salt
    1 1/2 C unsalted butter, softened, cut up
    1 Tbls. lemon juice
    2 tsp. vanilla extract
    3 oz. white chocolate


    Directions:

    Preheat oven to 350 degrees. Spray 15X10-inch baking pan with cooking spray. Whisk flour, 1 C of the sugar, lemon peel and salt in large bowl.

    With pastry blender or 2 knives, cut in butter until mixture resembles course crumbs. Stir in lemon juice and vanilla. Press dough into pan, sprinkle with remaining 1 Tbls. sugar

    Bake 25 minutes or until golden brown. Cool on wire rack.

    Meanwhile, place chocolate in microwave-safe bowl. Microwave until melted, stirring every 30 seconds until melted and smooth. Drizzle over bars. Makes approximately 48 bars. These are yummy!
