    Hi, everyone. I thought you might enjoy this recipe.

    Lemon Pie Cake

    Ice this lemon pie cake with a homemade fluffy cream cheese or lemon icing or a purchased creamy whipped frosting.

    1 box of lemon cake mix
    1 can (22 ounces) of lemon pie filling, divided
    1/2 cup of buttermilk
    4 large eggs

    Preheat oven to 350°.

    Grease and flour two 8” round layer cake pans.
    Measure 1 cup of the pie filling, cover and refrigerate. Put the remaining pie filling (about 1 1/4 cups) into a mixing bowl, along with the buttermilk and eggs; beat until well blended. Blend the cake mix into the mixture. Beat on high speed of electric mixer for 2 minutes, scraping the sides of the bowl a few times.
    Spread batter in pans. Bake for 35 to 45 minutes, or until cake springs back when lightly touched with a finger. Cool in pans on a rack for 15 minutes. Cool completely before icing.
    Invert one cake onto a serving plate. Spread the reserved lemon pie filling over the top of the cake, then cover with the second layer. Frost with fluffy frosting or purchased creamy frosting, as desired.

    Me, too, Mama. I'm always trying to convince my clients to order a lemon cake. I'm sorry I haven't been with you guys for a bit. I lost my precious sister and my only child within 62 days of each other this year and I have been a wreck. Have to raise my daughter's four minor children and it is really taxing. I will try to participate more on the forum.

    So sorry for your loss - I lost my mom in May - I don't know if I will ever get over it. Life goes on and we must too - even though we feel we can't. You'll be in my prayers.

    Thank you both. You're right, Mama, we must go on. I will definitely be sending warm thoughts your way for the loss you have suffered is indeed a stiff one. I've been there, too, and you need to know that even 40 or 50 years from now, you will ache for her. Please find comfort in those memories that make you smile. The pain will never go away but it will get easier with time. Stay strong. @CF: thank you so much. I am so happy that I found this forum.
