    Wink Apple Pumpkin Spice Cake

    This only took about 45 minutes in my oven. This cake is divine! It tastes like the holidays and the orange zest is really yummy in it.


    Apple Pumpkin Spice Cake

    Ingredients

    1/2 cup butter
    1 1/2 cups sugar
    2 eggs
    1 teaspoon vanilla extract
    1 1/2 cups apples, diced ( 2 medium)
    1 cup canned pumpkin
    2 cups all-purpose flour
    1 teaspoon baking powder
    3/4 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon ground cloves
    1/2 teaspoon ginger
    2 teaspoons orange zest
    confectioners' sugar

    Directions

    1. In a medium bowl, sift together the dry ingredients.
    2. In a large mixing bowl, cream the butter; beat in sugar. Add the eggs, one at a time. Stir in vanilla, apples, and pumpkin.
    3. Blend in dry ingredients and orange peel. Turn into a greased and floured 9-inch bundt or angel cake pan.
    4. Bake in a 350 degree oven for 55 to 60 minutes, then turn out on a rack to cool. Sprinkle with confectioners' sugar when cool.

    Sounds good and super easy. Got it copied. Will be making this one. Will have to get pumpkin. Wonder if sweet potato would work? Naw, lets follow the recipe. CF

    I'm not sure how sweet taters would change the density of the cake.

    Gotta, gotta, GOTTA try this one Janie. The addition of the orange zest undoubtedly adds SO much. YUM!

    sweet potato is interchangable with pumpkin as is squash so it just may be good too -

    this does look absolutely scrumptious though!
