Tried this one today for Sunday supper. My father in law loved it. Of course he had no idea about the butter, cream or the extra glug of orange liquor I threw in them when I mashed them. ;) Will be repeating this one.

Mashed Sweet Potatoes

Ingredients

4 tablespoons unsalted butter, cut into 4 pieces
2 tablespoons heavy cream
1/2 teaspoon salt
1 teaspoon sugar
2 lbs sweet potatoes, peeled, quartered lengthwise, and cut crosswise into 1/4 inch-thick ( about 2 large or 3 medium-small potatoes)
salt & freshly ground black pepper

Directions

1. Combine butter, cream, salt, sugar, and sweet potatoes in large saucepan.
2. Cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork.
3. This will take between 30 to 45 minutes.
4. Take off heat and mash sweet potatoes in saucepan with potato masher.
5. You can also put potatoes into kitchen aid mixer and mix.
6. Stir in salt and pepper to taste.
7. Serve immediately.

JG, sounds really great. we are sweet potato lovers. And the new crop is just now coming on the market.
Question: cooking the potatoes with 2 tablespoon cream and 4 tablespoon butter for 30 to 45 min. I am thinking I am gonna run out of liquid. CF

I doubled the recipe and didn't have any problems with them being dry. I had a lid on mine while they cooked. Must have kept in the moisture maybe.
