1 cup buttermilk
1 cup quick cooking oats
1/4 cup raisins
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
2 - 3 tbsp oat bran
1/2 cup chopped walnuts
2 egg whites
1/4 cup light brown sugar
1/4 cup canola oil
1 tbsp honey

  1. Combine the buttermilk, oats, and raisins in a ceramic bowl and let stand a 1/2 hour.
  2. Preheat oven to 400 degrees F.
  3. Combine the flour, baking powder, baking soda, and oat bran.
  4. In an large mixing bowl mix the egg whites, sugar, canola oil, and honey together.
  5. Add the flour and oats mixture alternately to the flour mix, and stir between additions.
  6. Fold in the chopped walnuts,
  7. Pour the batter into 12 well greased muffin cups.
  8. Bake for 25 minutes.
