Overnight French Toast

1 cup packed brown sugar
1 stick butter or margarine
2 tbsp. water
2 green apples, peeled and sliced thin
3/4 tsp. ground cinnamon
12 slices white bread
5 eggs
1 ½ cups whole milk
1 tablespoon vanilla

Combine brown sugar and butter in saucepan, heat till melted. Add water, apples and cinnamon and continue to cook until apples are slightly soft and sauce is foamy. Pour mixture into lightly greased 9x13 pan and let cool completely. Cover with bread slices (stack bread slices by 2's). Combine eggs, milk and vanilla, pour over bread. Cover and refrigerate overnight. Bake at 350° for 40 min. Cover last 15 minutes or earlier if bread is too brown. You could sprinkle with powdered sugar after baking if desired.
