Preheat oven to 350 degrees.

Butter oblong baking dish and fill with quartered apples. Place in oven while making a batter of 1 tbls. butter, 1/2 C sugar, 1 egg, 1/2 C milk, 1 C flour and 1 tsp baking powder. Pour the batter over the apples and bake until brown.

For the Sauce: Heat 1 pint of milk in double boiler, then pour in 2 eggs beaten with 1/2 C sugar and a little salt. Flavour with 1/2 to 1 tsp vanilla.

This pudding can also be made using peaches or apricots instead of apples.

Serve with whipped topping or fresh whipped cream. Simply super!!

This is delicious with New England Nutmeg Sauce:

Ingredients:

1/2 C sugar
3 tbls. flour
2 C boiling water
1 tbls. butter
1 tsp. freshly grated nutmeg


Directions:

Mix well the sugar, flour and a pinch of salt. Add boiling water gradually, stirring constantly. Add butter and cook 5 minutes. Stir in nutmeg and serve hot over slices of the fruit pudding. :):)
