3c. cooked long grain white rice (I have used chinese take-out leftovers, and aactually like that option best)
1/2 c. chicken or vegetable broth 2-3 tbs butter or margarine 1 c. diced onion 1/3-1.2 c. finely minced cilantro sea salt and freshly ground pepper to taste In large microwave safe bowl, sweat onion in butter or margarine, in microwave at 60% power for as long as it takes to get them tender and translucent. (about 2-4 min) Add broth and cilantro, microwave 1 min at fullest power. Stir in rice. Add salt and pepper to taste. |
