Default Vegetable Rice

VEGETABLE RICE


1/2 cup onion, chopped
3 Tblsp butter
2 cups cooked rice
1 tsp salt
1/2 cup celery, chopped
1/2 cup parsley
2 carrots, grated
1-4 oz can chopped mushrooms, untrained

Sauté onion and celery in butter until tender. Add remaining ingredients and mix well. Pour into a greased casserole dish and bake covered in a 300 degree F oven, for 1 hour.

Vegetable Rice? Sounds good enough, I was going to bring something to a dinner party type of thing. Was wondering what to bring, rice seems good.

we have veggie rice fairly often. It's simple and I think it looks "springy" with all of the colors.

for a really easy version, I've taken frozen mixed veggies and added to cooking rice.

This is how I make mine.

Basmati rice - 2 cups
Carrot - 1 no
Beans - 6 nos
Cabbage - 1/4 piece
Onion(small) - 1 no
Capsicum - 1 no
Pepper powder - 1 tsp
Salt - As reqd
Butter - 1 tbsp
Oil - 2 tbsp
Spring onion - A small bunch for garnishing

1)Chop all the vegetables into fine pieces.

2)Cook rice along with a tsp of salt and a few drops of oil. Drain and keep aside.

3)Heat butter and oil in a nonstick wok.

4)Add onion and fry, till it becomes soft.

5)Add all the vegetables one at a time and saute, till they become soft.

6)Add salt, pepper.

7)Add the rice and stir carefully on full heat.

8)Garnish with finely chopped spring onions.
