Chinese Fried Rice
Chinese Fried Rice
3 cups cooked rice ( left over best ) 6 large eggs 1/2 teaspoon salt salad oil 1/4 pound cooked ham , diced 1/2 cup frozen peas 1 tablespoon green onion, chopped In a medium bowl, with a fork, beat eggs, salt slightly and set aside. In 12 inch non- stick skillet, over medium heat, in 2 Tbl. hot oil, gently stir in rice until well coated with oil. Push rice to one side of skillet. In same skillet over medium high heat , heat 1 Tbl. oil, until very hot: pour in eggs: cook, with a spoon, stirring quickly and constantly, until eggs are the size of peas and leaves the sides of pan, mix eggs with rice Stir in ham and peas: heat through . Sprinkle with green onions. Serves - 4
