Default Yummy Sweet Potatoes With Pineapple

FOR THOSE WHO NEED A CHANGE AWAY FROM THE MARSHMALLOWS
AND SPICES ASSOCIATED WITH SWEETPOTATO CASSEROLES
GIVE THIS RECIPE A TRY!!!



1 STICK OF BUTTER
3/4 C. BROWN SUGAR
LG. CAN OF UNSWEETENED PINEAPPLE CHUNKS; DRAINED (save juice)
JUICE FROM CANNED PINEAPPLE AND ENOUGH WATER TO MAKE 1 CUP
3 TBSP. FLOUR
1 VERY LARGE OR 2 MEDIUM SWEET POTATOES

PEEL, QUARTER AND BOIL SWEET POTATOES; DRAIN AND PLACE THEM INTO A CASSEROLE DISH (USE LARGE CAN OR 2 SMALL CANS DRAINED SWEET POTATOES IF DESIRED). ADD DRAINED PINEAPPLE CHUNKS TO THIS AND SET ASIDE.
IN A SMALL SAUCE PAN MELT BUTTER OVER MEDIUM HEAT ADD FLOUR TO POT AND STIR UNTIL FLOUR IS WELL DISSOLVED, TO THIS POUR IN RESERVED PINEAPPLE JUICE AND BROWN SUGAR STIRRING WELL WITH A WISK, CONTINUE WISKING AND COOK UNTIL SLIGHTLY THICKENED. POUR THIS OVER THE SWEET POTATOES/PINEAPPLE IN THE CASSEROLE DISH; PLACE INTO A 350 DEGREE OVEN AND BAKE FOR 30-40 MINUTES. UNCOVERED.
