    Default Dilled New Potatoes

    Dilled New Potatoes

    2 tsp. fresh dill, chopped
    1/4 cup oil (I use Canola)
    3 Tbs. fresh lemon juice
    2 Lbs. new potatoes, skins left on, thinly sliced

    Preheat oven to 450° F. Combine first 3 ingredients in a bowl. Toss in potatoes and season with salt and pepper to taste. Transfer to a well oiled casserole pan and roast about 25 minutes, turning occasionally until golden. Serve immediately.

    Per Serving: calories 139, fat 5.4g, calories from fat 35%, protein 2.1g, cholesterol 0.0mg, dietary fiber 2.1g

    Yum, MsMai!

    A more fattening version of this is to melt an amount of butter. Whisk in the same amount of sour cream (for instance, 1/2 c. melted butter and half cup of sour cream...)- then throw in as much fresh or dried dill as you like. Toss cooked, hot potatoes in this "sauce"- and boy, is it YUMMY!
