Default Homemade Rice-A-Roni

1 c. basmati rice
small amount thin spaghetti noodles broken into small pieces
1 tbsp. beef bullion powder concentrate
1/4 tsp. parsley flakes
1 sm. can mushrooms drained
1/4 tsp. dried onion

Brown rice & vermicelli (spaghetti pieces) in butter or oil until lightly browned, then pour in 2 1/2 cups of boiling water and then stir in all other ing. place lid on top and place on medium low heat for 25 min's or until all water is absorbed. Stir, serve and enjoy.


Use your imagination and different types bouillion (chicken, tomato/chipolte, etc.) and use different add-ins (drained water chestnuts, diced celery, carotts, etc.) and come up with your own new Rice-A-Roni flavors! Last night I made a Spanish Rice using the Tomato & Chipolte flavored bouillion (Knorr) with chopped onion, celery, and garlic added it was delicious!

Thank you Cathy. You have just showed me another low sodium recipe without even knowing it. Sodium free bouillon (5 mg per cup actually) is available and the other ingredients are very acceptable. Now I know I will work in some diced up grilled chicken in here and end up with a main dish.

Cathy what would a chopped fresh onion equivilent be to 1/4 tsp dried onion?

Cathy, Isn't it shocking how they can get away with selling a little box of Rice A Roni for? Homemade is so much better too. I love rice and there is no way one of those little boxes of "Roni" will feed a family of 5....

JP I believe a 1/4 tsp of minced dried onions would be close to approx. 1/8 a cup of fresh or so. I love the flavor the minced dried onions have. But you're right this would be so good with added chicken, I never thought of it. I make this often as we have a large number of mouths to to feed!

OOOOPs, I forgot Cathy, lol. When I make my ricerroni I use the lipton beefy onion soup packette.
