Default Pasta with No-cook Tomato Sauce

Pasta with No-cook Tomato Sauce

Don’t attempt this dish without fresh, juicy, vine-ripe summer tomatoes.

6 good-sized fresh local tomatoes
2 garlic cloves, chopped
3 tablespoons extra-virgin olive oil
1/3 cup fresh chopped basil
Kosher salt
Coarsely ground black pepper
6 cups hot cooked penne, orecchiette or other small pasta
Freshly grated Parmesan, Asiago or other favorite grated hard cheese

Chop tomatoes and place in a bowl. Add garlic, olive oil, basil, salt and pepper. Toss gently. Cover with plastic wrap and let stand 2 to 4 hours. Toss with hot pasta. Serve with Parmesan cheese

Now is the time to make this and I think I will do just that this week. We have several fresh vegetable stands around town right now and I'm going for some zuchinni, tomatoes, corn and okra. Thanks for the recipe.
