Default Spanish Rice

Spanish Rice

Ingredients:
1 large onion chopped
3 tablespoons of olive oil
1 large garlic clove smashed
1 1/2 cup raw long grain rice
1 (28 oz) can crushed tomatoes with liquid or
1 (28 oz) can whole peeled tomatoes with liquid ( manual hand crush tomatoes )
1 1/2 cup boiling water or chicken broth
salt and pepper, to taste
1 cup chopped green bell pepper

Directions:

In a sauce pot, over medium heat, heat oil and cook onion and bell pepper until wilted and soft and then briefly garlic. Stir in raw rice and cook and stir until rice gets a pale tan color. Add tomatoes with liquid, the boiling water ( or stock ) and bring to a boil, Cover and simmer until rice has absorbed the liquid and is tender.(depending on the rice, you may have to add more water or stock.) When tender, fluff with fork and serve.

Alternate recipe:

Saute some white rice in butter or oil in a skillet until it's slightly brown. Add your water and a couple of cubes/teaspoons (depending on the form its in) of caldo de tomate (made by Knorr's -- it's tomato bouillion). Simmer for a while, and then toward the end (or sooner, depending on how soggy you like your veggies), add onions, tomatoes (I use Roma), and chilis/peppers if you want. You can also add frozen corn or peas. Very tasty and easy!
