Ingredients: 12 (1/2-inch thick) slices of Italian bread, 2 garlic cloves halved,1/4 cup olive oil, 2 tomatoes, sliced into 6 thin slices each, 1/2 lb. smoked or plain mozzarella cheese, shredded. I tell you, I live in the country, in Texas. There is nothing like a fresh grown tomato on this recipe.
Preheat broiler. Broil bread until golden brown on both sides, about 1 1/2 min. on each side. Rub one side of bread with garlic halves, and brush with olive oil. Pat each tomato slice dry. Lay the tomato slices on top of the bread slices. Divide shredded mozzarella cheese along the top of slices of bread and tomatoes. Bake until cheese is melted, about 5 min.
