one sheet heavy-duty alumninum foil
one small onion, thinly sliced 4 medium red potatoes, cut into bite-size pieces 2 tbs. olive oil 1 tsp. salt 1/2 tsp. dill 1/4 tsp. pepper Preheat oven to 450 degrees. Spray oil with cooking spray. Center onion on sheet of foil. Layer potatoes evenly on top of onion. Drizzle with oil, sprinkle with seasoning. Bring up sides of foil and double-fold. Double-fold ends, leaving room for heat circulation inside pocket. bake 30 to 35 minutes on a cookie sheet in oven. Be careful opening the packet; the steam is hot! |
