    Default Summer Squash Casserole

    Ingredients:

    2 C Summer Squash, washed and sliced
    1/4 C chopped onion
    1 C Shredded carrots
    1 C sour cream
    1 can cream of chicken soup
    1 8 oz. pkg. Stuffing Mix
    1/4 C melted butter


    Directions:

    Preheat oven to 350 degrees

    Boil salted water, add chopped onion and squash. Cook for 5 minutes and drain.

    While squash is cooling, mix sour cream, soup and shredded carrots. Fold in squash. Melt butter and add to stuffing mix.

    Using an 8 X 10-inch baking dish, spread 1/2 of the stuffing mix in bottom of dish. Combine vegetable mixture ingredients and pour over stuffing mix in baking dish. Spread other 1/2 of the stuffing mix over casserole. Cover with foil and bake for 30 minutes. This is so good!!
