Fruit Soup
Ingredients
1/4 lb. mixed dried fruit
1/4 lb. dried apricots
4 cups water
1 Tbsp. quick cooking tapioca
1/2 cup sugar
1 cinnamon stick
2 Tbsps. lemon juice
1 cup vanilla lowfat yogurt
Instructions
Combine first 6 ingredients in a heavy saucepan. Bring to a boil. Reduce heat to low. Cover and simmer 25-30 minutes or until fruit is tender. Add lemon juice. Serve warm or chilled with vanilla yogurt.
