Peanut Butter Pumpkin Soup
2TBS butter
2 cups pumpkin puree
1 cup pureed sweet potatoes - I usually use leftover mashed ones
1/2 cup smooth peanut butter
3 cups vegetable stock/broth
1/2 tsp pepper
1/2 tsp salt
Melt butter; stir in pumpkin, sweet potatoes,and peanut butter.
Add stock, salt, and pepper. Stir well til smooth.
Reduce heat and simmer for 20 minutes.
Before serving garnish with chopped chives and yogurt if desired.
