1 tab veg oil or butter
1 chopped onion
2 or more minced garlic cloves
1 tsp basil
salt pepper to taste
1 1/2 cups of cooked beans (I used kidney and garbonzo)
4 cups of vegetable stock
2 cups f peeled and cubed squash (I used butternut)
1/2 chopped green pepper
1/2 cup of corn (optional)
Fry onion and basil with butter
add beans mashing about 1/3
add stock and squash and pepper
bring to boil then reduce to simmer for 10 mins
add corn and heat through.
serves 4
