5 cups watermelon, seeded and cubed
2 cups mango, peeled and diced 1/4 cup lime juice 3 Tablespoons fresh mint, chopped 1 Tablespoon fresh ginger, minced 1 Tablespoon honey 1/8 teaspoon ground cardamom 1. Place 3 1/2 cups watermelon and 1 cup mango in a food processor and blend until smooth. 2. Dice up the remaining 1 1/2 cups watermelon and 1 cup mango into tiny pieces and add to the puree. 3. In a small, separate bowl, combine the lime juice, mint, ginger, honey and cardamom. Add this to the previous mixture and stir well. 4. Chill and serve. |
