Default Italian Vegetable Soup

1 lb hamburger (cook & drain)

Saute the following ingredients for 5 min. in a little olive oil or a little bit of grease from the hamburger:
1 C diced onions
1 C sliced celery
1 C sliced carrots
2 cloves minced garlic

In large stockpot combine veggie mixture and hamburger. Add:
1 16oz can diced tomatoes, undrained
1 15oz can tomato sauce
1 15oz can kidney beans, undrained
2 C water
5 t beef bouillon granules or 2 T beef broth paste or 2 cans beef broth
1 T dried parsley flakes
1 t salt
1/2 t dried oregano
1 t dried basil
1/4 t black pepper

Bring to a boil. Add:

1 C frozen or fresh green beans
1/3 C barley

Bring back to a boil. Cover; reduce heat. Simmer until barley is cooked according to package directions. Delicious garnished with feta cheese. This is our favorite soup. I usually double or triple the recipe (in two pots) and then freeze a bunch. It freezes really well.

That sounds really good!

Do you think it would work just as good to use stew meat instead of hamburger?
