I've also made French Onion soup with Chicken Broth. Comes out quite nice with a rich golden color. Also Gruyere cheese is a great cheese to use besides Swiss Cheese. And unseasoned croutons are a great alternative to bread yet my favorite is sour dough bread cut into a round to fit the top of the bowl or cup and then topped with cheese.

I've done French Onion soup with both beef and chicken broth - usually using Swiss or Gruyere - until one day I was desperate and I used provolone - place on thick sliced Italian bread, lightly buttered, topped with provolone and sprinkled with Pecorino Romano.

Great recipe, Greg!
Like mama, I usually make French Onion Soup with half beef/half chicken stock. And for me the key is making sure the onions caramelize beautifully- and as darkly as one dares allow them to get! I also typically add either sherry or brandy. ...and for my tastes- Swiss, Gruyere, Mozzarella, Provolone- it matters not- the cheesier, the better! YUM! Thanks for poutting a soup in my thoughts that I haven't made or eaten in a long, long time, Greg! |

Strange this thread should reappear just today! This morning I made FR. Onion soup before I left for work, them I refrigerated it and we are going to have it for dinner tonight. Kev I put both splashes of Sherry and Red Wine in mine, also a few splashes of Soy Sauce, I like you, carmelize the onions very well! We are going to have it with homemade chicken salad sandwiches made with last nights left over baked chicken! Soup & Salad night Yee-haw!!!!
