ngredients:
1 red bell pepper, diced
1/2 yellow onion, diced
2 celery stalks, diced
1 T olive oil
1 tsp salt
1 tsp black pepper
2 1/2 lbs ground beef/turkey/pork/whatever
2 cans kidney beans, drained and washed
1 can diced tomatoes, drained
16-24 oz tomato sauce (depending on how saucy you like your chili)
1 package of chili seasoning or 6 T of your favorite chili spice blend (I use Tastefully Simple Wahoo Chili seasoning)
Additional salt/pepper, if desired

Directions:
1. Heat a large soup pot over medium-high heat, add olive oil, red pepper, onion, celery, salt, and black pepper. Saute until translucent. Remove from pot and place into another bowl.
2. Add ground meat to hot soup pot and brown. Drain off fat, if desired.
3. Add sauteed veggies to ground meat, add kidney beans, tomatoes, and tomato sauce. Stir until blended.
4. Blend in chili seasoning, reduce heat to medium-low, cover, and simmer for 1-2 hours.

Sounds great Shelley. Could you use chili powder instead of the seasoning. I can't have salt so the seasoning is usually a no-no.

I'm sure you could. I've never made it that way though.
