This is my own recipe, I find the the caraway seed adds the perfect touch.
Cold weather meal, nothing but comfort. Hope you enjoy. CF:)

Potato soup

Ingredients
4- Medium white potatoes
½ cup diced carrots
1 medium onion diced
½ teaspoon caraway seed
3 tablespoon butter
Milk to cover
3 tablespoon flour
Salt and pepper to taste

Directions
Cook carrots, onion and caraway seed until carrots are tender, set aside.

Peel and cut potatoes into bite size pieces.
Boil until tender.
Drain water from potatoes, put in the butter, carrots, onion and caraway seed include the cooking water.
Add milk just to cover, bring heat to just before boil.
Mix flour with cold water to make a paste, add to soup slowly while steering. This will thicken your soup. Use as much or as little as needed.
Add salt and pepper to taste.
Note
½ cup of diced ham is also a nice addition.
Serve with crusty bread or cornbread.
This soup works well in bread bowls also.

I have to have bacon in potatoe soup.
It doesn't have to be much because
sometimes it overpowers the soup;
same with clam chowder.

Very simular to mine CF but I don't use the caraway seeds or the carrot. Might just have to try that. I use 1/4 tsp celery seed in mine and that's to only 1 1/2 - 2 Lbs potatoes.

BTW JW I used to always use the bacon as a topping until my heart Doctor really screwed up all my recipes :mad:

We still eat bacon but have cut back to just special occasions.
We use very little salt anymore and don't miss it. I was a salt-
aholic, too. There again, I use Spanish sea salt, HI pink salt, &
Grey French but sparingly.
