Poultry Seasoning is excellent for homemade stuffing, dressings or for fried chicken. It's a good rub for poultry, mixed into butter and then inserted between the meat and skin of a bird really flavors the meat. I usually use Bells Poultry Seasoning and this is a pretty good recipe for making it homemade.
1 tablespoon rosemary 1 tablespoon oregano 1 teaspoon sage 1 teaspoon of ginger 1 tablespoon marjoram 1 tablespoon thyme 1 teaspoon pepper I recently posted a fried chicken recipe and in the recipe I listed Poultry Seasoning in the ingredient list. Several readers of the recipe were quick to point out that Marjoram is an excellent herb for fried chicken and how I should use it. Knowing whats in a seasoning blend is a good thing. |

May I share another Poultry Seasoning:
2 tablespoons parsley flakes 1 tablespoon oregano 1 tablespoon marjoram 1 tablespoon thyme 1 tablespoon rosemary 1 tablespoon celery leaves 1 tablespoon ginger 1 teaspoon pepper 1 teaspoon sage Mix together well and sprinkle on chicken. or another: 3 teaspoons dry mustard 1 teaspoon garlic powder 3 teaspoons onion powder 1 1/2 teaspoons white pepper 1 teaspoon thyme 1/2 teaspoon basil 3 teaspoons paprika Mix together and sprinkle on chicken. It's a matter of personal preference - but it is so much fun to create! |

Chili Powder
Makes 1 cup 4 large dried mild chili peppers 2 medium dried hot chili peppers 4 teaspoons cumin seeds 1/2 teaspoon whole cloves 1 teaspoon coriander seeds 1/2 teaspoon whole allspice 1/4 cup oregano 2 tablespoons garlic powder 1 tablespoon salt 1/2 teaspoon sugar Method: Remove stems and seeds from peppers. Cut peppers into small pieces. Place in a heavy skillet. Add cumin, cloves, coriander, and allspice. Over low heat, stirring constantly, cook until mixture begins to crackle and gives off the aroma of the peppers. Cool to room temperature. Place pepper mixture in blender. Add oregano, garlic powder, salt, and sugar; blend to a find powder. Spoon into a screw-top jar. Use to season eggs, poultry, beef, and lamb. |

Chinese Five Spice Blend
2 tablespoons anise seeds, crushed 2 tablespoons freshly ground pepper 2 tablespoons fennel seeds, crushed 2 tablespoons ground cloves 2 tablespoons ground cinnamon 1 1/2 tablespoons ground ginger 1/2 tablespoons ground allspice Combine all ingredients; store in an airtight container. Popular to rub or marinate pork, tofu, or fish. Yield: 3/4 cup. (apparently someone can't count) lol |

Chinese Seasoning
1/4 cup ground ginger 2 tablespoons ground cinnamon 1 tablespoon allspice 1 tablespoon crushed aniseed 1-1/2 teaspoons ground cloves In a screw-top jar, combine all ingredients. Cover tightly, shake until well mixed. Keep in a dry place. Yield: 1/2 cup |
