Rub Rules!

Rubs are great for flavoring and tenderizing meats. All those flavors permeate the meat as it is sitting overnight in the refrigerator. I absolutely love rubbed meats on the grill. Here's a few tips to help you:
Rub the dry mix over the raw meat and place in refrigerator. I always use a glass pan and cover with plastic wrap.
The moisture in the meat will cause the rub to stick to your hands so sometimes it is best to sprinkle the rub on instead of trying to rub it in.
You can use any rub you want - commercial or homemade. Some ingredients are black pepper, chili powder, cumin, crushed red pepper, celery seed, garlic powder or minced garlic, salt, thyme, rosemary, grated lemon, lime or orange peel, ground mustard and even brown sugar.
To make a paste-type rub, add a small amount of liquid to the dry mixture forming a dry paste. This can be vinegar, cider vinegar, wine, fruit juice.
Try to use sugar very sparingly in rubs. Sugar will melt and cause flare-ups on grills and in broilers. Burnt sugar has an awful taste as well. You don't need a lot of sugar for flavor anyway.

Chic Rub
Under the skin baby - under the skin!
4 tsp. chicken seasoning
1 tsp. cumin powder
1 tsp. coriander powder
1/2 tsp. allspice
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
Lift the skin and RUB! Grill and slather on your favorite BBQ sauce, if desired.

Rib Rub
2 tablespoons paprika
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons red pepper
1 1/2 teaspoons white pepper
1/2 teaspoon black pepper
1 teaspoon dried thyme leaves
1 teaspoon oregano
Combine - does about 4 lbs. ribs.

Beef Rub
4 cloves garlic, finely minced
18 allspice berries
1-inch piece cinnamon stick
1 teaspoon black peppercorns
1 teaspoon coriander seeds
1/2 teaspoon whole cloves
3 tablespoons chile powder
3 tablespoons packed dark- brown sugar
1 tablespoon dried thyme
2 teaspoons dry mustard
1 1/2 teaspoons salt
1 teaspoon freshly grated nutmeg
Combine.

Generic Rub
2 tb black pepper
2 tb paprika
2 tb onion powder
1 tb brown sugar
1 tb chili powder
1/2 ts ground sage
1/2 ts ground nutmeg
1/4 ts cayenne pepper (opt)
Combine.

Pork Rub
1-1/4 cups white sugar
1-1/4 cups brown sugar
1/2 cup salt ( seems like a lot, but thats what it calls for )
1/4 cup freshly ground black pepper
1/4 cup paprika
Combine; rub into pork 20 minutes before cooking.

Memphis-Style Dry Rib Rub
3 tbsp mild Hungarian paprika
2 tsp seasoned salt
2 tsp freshly ground black pepper
2 tsp granulated garlic
1 tsp cayenne pepper, or more to taste
1 tsp oregano
1 tsp dry mustard
1/2 tsp chili powder; or more to taste
1 tsp thyme
1 tsp coriander
2 tsp green peppercorns, dried and crushed
1 tsp allspice
Grind ingredients until fine and combine well. Hand rub this dry marinade on washed and dried spareribs or chicken overnight before smoking or cooking.

All Purpose Rub
1/4 cup coarse salt (kosher or sea)
1/4 cup (packed) dark brown sugar
1/4 cup paprika
3 tablespoons freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon dried onion flakes
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon celery seeds
Combine.

Try this rub:
1/4 cup coarse salt (kosher or sea)
1/4 cup dark brown sugar
1/4 cup sweet paprika
2 tablespoons freshly ground black pepper
OR
1/4 cup coarse salt (kosher or sea)
1/4 cup dark brown sugar
1/4 cup hot paprika (for a spicier rub)
2 tablespoons freshly ground black pepper

No-Name Rub
1/4 cup coarse salt (kosher or sea)
1/4 cup (packed) dark brown sugar
1/4 cup paprika
3 tablespoons freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon dried onion flakes
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon celery seeds
