Heat oven to 350
1 can tomatoes or 2 cups fresh stewed tomatoes 1 1/2 cups drained canned or frozen corn 1/2 onion (or more) minced 1 1/2 tblsp sugar 1/8 tsp pepper 3 tblsp melted butter 2 cups cubed stale bread or packaged bread cubes Butter the casserole dish, combine tomates & corn in it and add seasonings, stirring well. Pour melted butter over cubed bread and then put the buttered bread cubes on top of the tomato & corn mixure. Bake at 350 (uncovered) for about an hour. If you don't want to mess with the bread cubes, you can use bread crumbs, dry or buttered, but the cubes give good texture & some crunch. |
