Ingredients
1 1/2 lbs snow peas 1/2 stick butter 2 shalots or 1 small onion 1 cup vegetable broth (hot) 3/4 cup cream 1 tsp flour salt pepper (garlic powder) 1 bunch parsley Directions Wash the snow peas and remove strings. Melt the butter and fry the chopped shallots or onion in the butter until it becomes translucent. Add the wet snow peas and stir through it all until the snow peas are glaced with butter. Add the hot broth, bring to a boil and let simmer for 10 minutes. In a small bowl whisk together the cream and the flour. Add to the peas, stir and bring back to a boil. Take off the stove. Season with salt, pepper and if you like with a dash of garlic powder. Chop the parsley, sprinkle over the peas and enjoy. |
