Ingredients:
1 bundle spinach 1/4 cup flour 1/4 cup cornstarch 1/4 cup and 2 tbsp water salt, dash pepper, dash cooking oil for deep frying Directions: Remove spinach leaves from stems and rinse thoroughly. In a bowl, combine flour, cornstarch, salt, and pepper. Gradually mix in the water and stir until well blended. In a deep fryer or small saucepan, heat enough oil fill the pan 2 inches deep. Dip a leaf in the batter and deep fry. Before it turns golden remove and drain on paper towels. Repeat for remaining leaves, taking care not to overcrowd the pan. Serve with vinegar or mayo dip. |
