Ingredients:
• 2 pounds baking potatoes • 1 to 2 onions, sweet preferably • 2 tbsp finely minced garlic • Kosher salt • Freshly ground pepper • 1/4 C margarine • Butter-flavored spray (like Pam) Method: Wash and thinly slice potatoes; thinly slice onions. Spray a 2 1/2-quart oven-proof casserole with butter-flavored spray. Layer potatoes, onions, sprinkle some garlic, salt and pepper; dot with a little margarine and spray with butter-flavored spray. It should easily do 2 if not 3 layers, depending on shape of casserole. End with margarine and another quick spray. Bake in 350 oven, covered, for 45 minutes. Remove cover and bake another 15 to let top brown. |

We are lucky enough to have recently started getting microwave potatoes. They come wrapped in clear plastic, which you don't remove to cook for 7 minutes on high in the Mircrowave. They come put perfect if you remember to take the wrapper off right away. I think that moght be important, although I never left it on.
