Ingredients:

• 2 pounds baking potatoes
• 1 to 2 onions, sweet preferably
• 2 tbsp finely minced garlic
• Kosher salt
• Freshly ground pepper
• 1/4 C margarine
• Butter-flavored spray (like Pam)

Method:
Wash and thinly slice potatoes; thinly slice onions. Spray a 2 1/2-quart oven-proof casserole with butter-flavored spray. Layer potatoes, onions, sprinkle some garlic, salt and pepper; dot with a little margarine and spray with butter-flavored spray. It should easily do 2 if not 3 layers, depending on shape of casserole. End with margarine and another quick spray. Bake in 350 oven, covered, for 45 minutes. Remove cover and bake another 15 to let top brown.

Nice recipe pinklife! My family would love this!

It seems a little sinful though. Too much carbo and fat, don't you think? Well, my family really doesn't care .

We are lucky enough to have recently started getting microwave potatoes. They come wrapped in clear plastic, which you don't remove to cook for 7 minutes on high in the Mircrowave. They come put perfect if you remember to take the wrapper off right away. I think that moght be important, although I never left it on.
